Syd's Shrimp Taco Recipe
One of my go-to recipes is shrimp tacos. I make this for my friends and family all the time in warm weather months and it’s a crowd pleaser :)
Ingredients (based on 4 servings):
Tortillas: I like flour tortillas the best, but you can use corn tortillas
Shrimp: Seasoned with olive oil, cayenne pepper, salt, pepper. I usually get between 1-2 pounds depending on how many people I’m serving (3-4 shrimp per taco)
If you want it spicier I've used this recipe from Food 52
Guacamole: 3 large Avocado, 1 lime, 1 tomato, cilantro, half a red onion, jalapeno, 2 cloves garlic, salt/pepper/cayenne to taste, Cholula
Salsa
Tortilla chips
Toppings: Cabbage (usually buy a bag of pre-chopped), raw corn (3 husks), radishes
Spicy Aioli: 1 cup of Mayo and 1-2 tablespoons of adobe pepper sauce (depending on how spicy you like it)
Optional: Sour cream, cheese, pico de gallo, avocado slices
Instructions:
Let the shrimp marinade for at least 30 min - the longer the better
Grill or cook shrimp on stove top
Note: if you grill, I recommend using tin foil so the shrimp don’t fall through the rack on the grill
Chop the avocado, tomato, cilantro, red onion, garlic and jalapeño pepper. Mix together to make guacamole and then add salt, pepper, cayenne, lime and Cholula to taste
Place tortillas flat on tin foil and then warm them up in the oven or on grill
Cut the corn off the cob
Slice radishes
Mix mayo + adobe pepper sauce together
Create an assembly line of everything (tortillas, shrimp, corn, radishes, cabbage, salsa, aioli and guac) and serve!
